What is a Chorizo?
Chorizo in Argentina is a smoked, seasoned sausage, usually finely sliced, made mainly from pork but also from beef. It is one of the most popular types of sausage in Argentina and is often used in stews, empanadas, as a side dish, or as a topping on pizza or sandwiches.
What is a chorizo made of?
Chorizo in Argentina is mainly made from pork, but it can also be made from beef. There are regional differences here. It is seasoned with spices such as paprika, oregano, garlic, pepper, and onions.
The chorizo is filled into a collagen or natural animal casing and then cooked.
In the province of Buenos Aires or in the city of Buenos Aires, chorizo is usually made from pure pork and has a lighter color, reminiscent of white meat.
In the coastal region or in Entre Ríos and Corrientes, we find a completely different, somewhat darker chorizo sausage. This contains more beef (70% beef, 30% pork). However, this does not mean that the composition or quality is worse. It is purely a matter of taste.

Ingredients (for 2 servings):
- 4 Chorizo Bratwurst
- 2 bread rolls / baguettes
- 2 THE Chimichurri
Accesories:
To sear the chorizo in the best possible way, a fine grill grate is suitable. Ideally, it should be height-adjustable, as the buns require significantly less heat when toasting.
Time required:
55 min, consisting of 5 min preparation time and 25 min cooking time.
Preparation:
- Grill the chorizo over medium heat for 25 minutes on each side.
- Also halve the rolls and toast them cut side down so that they get as many roasted aromas as possible.
- Once the chorizo is crispy brown, it can be taken off the grill.
- Cut the chorizo sausage lengthwise so that it can be opened up, but does not fall apart (this cut is also called Mariposa, which means butterfly in German).
- If the rolls are also slightly toasted, spread them with chimichurri and place the chorizo on top.
- Bite in and just enjoy!
These sausage sandwiches (Chorizo + Pan = Choripan) are a typical Argentine appetizer, served as an appetizer at the classic Asado. However, it is also classic street food that can be found on every corner and especially at almost every football stadium.
