What is the Crema Amerikana?
Crema americana is a type of sweet dessert that is mainly popular in Latin America and Spain. It is a kind of cream or pudding made from milk, sugar, eggs, and vanilla. It is often used as a filling or topping for cakes or pastries, and sometimes it is also used as a filling for empanadas or other sweet pastries. In some regions, Crema americana is also called "natillas."
Recipe for Crema Amerikana:
Ingredients:
- 1 liter of milk
- 1 vanilla pod
- 6 egg yolks
- 150 g sugar
- 4 EL cornmeal or starch flour
Directions:
- Put the milk into a large pot and cut open the vanilla pod and add it. Heat the milk over medium heat, but do not let it boil.
- In a separate bowl, whisk the egg yolks and sugar until frothy.
- Stir the cornmeal or starch flour into the egg yolk-sugar mixture.
- Add about 1/4 of the heated milk to the egg yolk-sugar mixture and stir well.
- Return the egg yolk and milk mixture to the pot with the remaining milk and heat over medium heat, stirring constantly.
- As soon as the mixture thickens and starts to boil, stir for another 2-3 minutes, then remove from the heat.
- Transfer the cream into a bowl or into individual portions and let it cool.
- Chill before serving.
Optionally, you can add a small amount of rum or other spirits at the end to refine the Crema Amerikana.
Note: Crema americana can also be prepared in a water bath by placing the bowl with the cream into a larger pot of boiling water to ensure more even heat and cooking while stirring constantly.
Recipe for Grilled Fruits:
Ingredients:
- 2 peaches, halved and pitted
- 2 apples, quartered and cored
- 2 pears, halved and cored
- 2 bananas, peeled in the skin and cut diagonally into slices
- 1/4 cup brown sugar
- 2 tbsp cinnamon
- 1/4 cup champagne
- Whipped cream or vanilla ice cream for serving (optional)
Directions:
- Preheat the plancha to medium heat.
- Put the fruits on the grill
- When the fruits are soft and have light grill marks, sprinkle them with sugar and cinnamon. Then carefully turn the fruits to season them evenly.
- Afterwards, you can pour some champagne over it.
- Serve the grilled fruits warm or cold. Garnish with whipped cream or vanilla ice cream, if desired.
Note: You can also use other fruits such as pineapple, mangoes, or berries and season as desired with other spices like cloves, nutmeg, or ginger.
